The cereals reduced into flakes are then dried and cooled, in order to reduce the humidity ratio and the temperature increased during the previous treatments.

The process is carried out in one single structure divided in two parts: a first one for drying and a second one for cooling. Both treatments are developed by conveying the flakes on a perforated belt: in the first step, through a steam/air heat exchanger, hot air is blown, while in the second step, cold air will cool the product.

A set of controls permits a wide regulation of the transit time of the flakes in the drying and cooling phases, thusobtaining an optimal product with the characteristics of temperature and humidity suitable for its conservation.
